Soup au Nad
A delicious tomato, lentils, and quinoa soup that evolved from a recipe my dear friend Nadia used to make when we lived together. Over the years, some of the ingredients have changed and the recipe has been renamed “Soupe au Nad” (Nadia Soup rather than Nadia's Soup) because of my husband's beginner French.

Ingredients:
- pepper
- salt
- 2 tsp thyme
- 4 cups fresh spinach
- 0.5 cup quinoa
- 1 cup red lentils
- 6 cups vegetable broth
- 1 large can of diced tomatoes
- 2 garlic cloves
- 1 onion
- 3 tbsp olive oil
Instructions:
- Brown the garlic and onion in olive oil.
- Add the tomatoes and continue cooking for 2 minutes.
- Add the broth, lentils, and quinoa.
- Simmer over low heat for about 25 minutes.
- Add the fresh spinach.
- Continue cooking for about 3 minutes.
- Adjust the seasoning.
- Serve and enjoy.
