Jerk Chicken and Sweet Potato Salad
A surprisingly good and healthy recipe from my husband who teaked it through the years based on a restaurant where he used to go regularly.
Ingredients:
- 1 roasted chicken
- 4 green onions
- 2 tbsp avocado oil
- 3 pounds sweet potatoes
- 0.25 cup fresh cilantro
- 0.5 tsp salt
- 0.5 tsp cumin
- 2 tsp chili powder
- 3 garlic cloves
- 0.33 cup jerk sauce
- 0.33 cup olive oil
- 4 limes
Instructions:
- Set oven to 400°F.
- Cut sweet potatoes into bite-sized pieces. Toss with avocado oil.
- Roast sweet potatoes in oven for 30-40 minutes.
- While potatoes are roasting, pull apart the cooked chicken.
- In a large bowl, add dressing ingredients (lime juice, lime zest, olive oil, jerk sauce, garlic, chili powder, cumin, and salt).
- Toss to combine.
- Once potatoes are cooled, add to large bowl with dressing.
- Add shredded chicken, green onions, and fresh cilantro.
- Toss with all remaining ingredients.
- Toss to combine.
- Enjoy.
