Chicken Shawarma

Ingredients:

  • pepper
  • salt
  • 0.25 tsp nutmeg
  • 0.25 tsp cardamom
  • 0.5 tsp cinnamon
  • 0.5 tsp cumin
  • 0.5 tsp turmeric
  • 0.5 tsp cayenne pepper
  • 0.5 tbsp Aleppo pepper
  • 1 tbsp smoked paprika
  • 1.5 tbsp garlic powder
  • 1 tbsp thyme
  • 1/2 large lemon
  • 2 tbsp plain yogourt
  • 3 tbsp olive oil
  • 1/2 red onion
  • 2.5 pounds boneless chicken thighs

Instructions:

  1. Mix all ingredients together.
  2. Marinate from 2 hours to 2 days.
  3. Remove from the fridge.
  4. Preheat the oven to 425°F.
  5. Pack the marinated chicken tightly into a bread loaf pan (about 8.5x4.5x2.5).
  6. Pop it into the oven for 45-55 mins at 425°F.
  7. Remove the chicken from the oven, tilt the pan over a glass bowl or container to pour out the excess juices (save the juice to use as broth or to pour over the chicken).
  8. Flip the loaf pan onto a cutting board to remove the chicken and cut it into thin slices or strips.
  9. Serve it up however way you want - as is, on top of a salad, on a power bowl, whatever! This stays well in the fridge in an airtight lid for 4-5 days.
