Baked tomatoes

This delicious appetizer will surprise you with its deep and intense flavors. Serve it with crackers and your favorite fresh goat cheese.

Ingredients:

  • 1 baguette, thinly sliced crosswise, toasted into crostini
  • 200 grams goat cheese
  • 4 tbsp fresh basil
  • 4 garlic cloves
  • pepper
  • salt
  • 1.5 tbsp sugar
  • 1.5 tbsp dry origano
  • 1 large can of diced tomatoes
  • 0.66 cup olive oil

Instructions:

  1. Preheat the oven at 350°F.
  2. In a baking dish, combine the olive oil, tomatoes, origano, sugar, salt, and pepper.
  3. Bake 3 hours, stirring every 30 minutes.
  4. After 3 hours, verify that tomatoes are deep red and that water evaporated. You could need to bake a little longer (up to 30 min).
  5. Remove from oven.
  6. Add the freshly crushed garlic when still hot.
  7. Let cool down to room temperature.
  8. Add fresh basil.
  9. Serve with goat cheese and crostini.
