Baked Asian-Style Rice

A recipe from my dear sister that evolved over time into an asian-inspired version. A delicious confort meal.

Ingredients:

  • 4 green onions
  • 4 cups bok choy
  • 4 crushed garlic cloves
  • 2 tbsp fresh ginger
  • 2 tbsp toasted sesame oil
  • 0.25 cup olive oil
  • 400 g firm tofu
  • 2 cups Shitake mushrooms
  • 1 onion
  • 1 tbsp Better than Bouillon
  • 0.25 cup soya sauce
  • 3.5 cups water
  • 2 cups brown sushi rice

Instructions:

  1. Preheat oven to 350°F
  2. Cut vegetables and tofu into cubes.
  3. Add all ingredients, except bok choy and green onions, to the pot.
  4. Place in the oven uncovered.
  5. Check after 2 hours of cooking. If all the water is absorbed, add bok choy and return to the oven for 10 minutes. Cover if necessary.
  6. Remove from the oven, add green onions.
  7. Serve hot.
